Baked Potato Soup


-5 peeled potatoes -1 onion -6 slices of bacon -1 cup of sour cream -6 cups of water -salt and black pepper -green chives (chopped) -bacon chips


Place the potatoes and the onion on a tray and bake for 30 minutes at 250° or until fully cooked. In a pot fry the slices of bacon. Blend together the potatoes, onion and bacon using the water. Pour it in to the pot over the fat from the bacon, add the cream, stir frequently (add more water if necessary) and cook at medium heat. Garnish with the chives and the bacon chips.

This is an excellent soup for the winter, enjoy!
