Avocado and spinach Mousse

INGREDIENTS: 4-6 portions. -4 ripe and large avocados -1 small bunch of spinach, previously washed -8 tablespoons of apple vinegar -8 tablespoons of olive oil -salt -black pepper.

DIRECTIONS:

    Chop finely the spinach and set aside. Using a Knife cut the avocados in halves, remove the seed and with the help of a spoon take out the avocado from the peel. Pour it in to a bowl or a deep dish, add salt and smash it using a fork until smooth, add the finely chopped spinach and mix it together until it's incorporated, add the vinegar and olive oil and mix again, add pepper and more salt if needed. Enjoy!
    This mousse it's the perfect and delicious side for a steak, or poultry, flavors blend in amazingly good healthy and very fast to make.
